This week, I was craving chocolatey treat. So, I whipped up some of this pudding and it crushed my craving and left me satisfied for hours. I'm calling it Chocolate Peanut Butter Pudding, but I found that if you refrigerate it for a couple hours, it's more like a mousse. YUM!!
This pudding is super simple (which I love), rich and decadent. The coconut milk provides healthy fats that will keep you full for a long time & the cacao has a ton of antioxidants, vitamins, minerals, and serotonin to put you in a good mood 🙂 You can switch out the peanut butter for another nut butter or swap the chocolate for a splash of vanilla, or you can throw in a little of your favorite protein powder and make it breakfast!
Chocolate Peanut Butter Pudding
1/3 C coconut milk, from a can - liquid & solids fully mixed
2 T natural peanut butter
1 T cacao powder (or cocoa powder)
Optional 1 T maple syrup or honey (taste it before you add extra sweetener)
Place the coconut milk & peanut butter in a dish. [You could use a blender for a smoother consistency, if you'd like] Mix until mostly incorporated. Fold in cacao powder, mixing until smooth. Add a T of maple syrup or honey if you want it a bit sweeter. Refrigerate for up to 3 days or eat immediately. Enjoy!
Other ways to try this pudding:
~ Top with fresh berries or any diced fruit, chocolate chips or cacao nibs, unsweetened toasted coconut flakes, or chopped nuts
~ Leave out cacao and put in diced apples or bananas & sprinkle with cinnamon, or add diced mangoes
~ Switch up the cacao & peanut butter for pistachio butter & a splash of vanilla
~ Replace the peanut butter & cacao with coconut butter or manna & top with unsweetened shredded coconut
